HOW TO MAKE BLUEBERRY MOJITO
Using a muddler, muddle blueberries and simple syrup in a large highball glass (16oz) to release the juices. Try to get the blueberry pieces small enough to fit through a straw. You can use a blender for this step if preferred. (Muddling is a technique used to gently mash herbs and/or fruit to release the essence or juices.)
Clap the mint together in your hands to release the scent (you’ll know it’s worked when your hands smell minty!). And add the leaves to the glass.
Add in 2 oz rum and 1 oz lime juice, and stir to combine.
Fill your glass with ice to about an inch below the rim – this will give you room to stir. Top with lemon-lime soda and stir gently. The goal is to lift the blueberries, lime, mint and sweetener from the bottom of the glass and evenly disperse it throughout the drink.
Garnish with extra blueberries, mint and lime wheels.
