Strawberry Mojito

Sweet, fizzy and refreshing, this Strawberry Mojito recipe is a fun twist on the classic well-loved drink! Made with fresh strawberries, mint, lime juice and white rum, it makes the perfect easy summertime drink!

Ingredients
  

  • 3 large strawberries, sliced
  • 1 oz simple syrup
  • 2 oz white rum
  • 6 mint leaves
  • 3 oz lemon-lime soda (Sprite or 7UP)
  • 1 oz lime juice, freshly squeezed

Equipment

  • a muddler
  • 1 15 oz glass

Method
 

  1. Using a muddler, muddle 3 sliced strawberries and simple syrup in a large highball glass (15oz) to release the juices. (Muddling is a technique used to gently mash herbs and/or fruit to release the essence or juices.)
  2. Clap the mint together in your hands to release the scent (you’ll know it’s worked when your hands smell minty!). And add the leaves to the glass.
  3. Add in 2 oz rum and 1 oz lime juice, and stir to combine. Then fill your glass with ice.
  4. Top with lemon-lime soda until filled.
  5. Garnish with extra strawberries, mint and lime wheels. Enjoy!

Notes

Hosting a larger group? You can easily make a pitcher of strawberry mojitos by pre-muddling your ingredients with the lime juice and simple syrup, and store them in an airtight container.
To make a large batch, you will need:
  • 15 strawberries
  • 4-5 oz simple syrup, to taste
  • 10 oz white rum
  • Small bunch mint leaves
  • 15 oz lemon-lime soda
  • 4-5 oz lime juice
Use ginger beer (or ginger ale if you're shy) to add a spicy kick in place of the lemon-lime soda.
Add a lime-sugar rim by zesting some fresh limes into sugar, running a lime wedge along the edge of the glass and then dipping the rim of the glass in the lime zest-sugar mixture.
