Method
- Place a martini glass in the freezer or fill it with ice while you prepare the drink.
- In a cocktail shaker filled with ice, combine vanilla vodka, passoa, passion fruit puree, passionfruit syrup, pineapple juice, and lime juice.
- Shake vigorously for 15-20 seconds until the mixture is well chilled and frothy.
- Empty the martini glass if chilled with ice.
- Strain and pour the cocktail into the martini glass.
- Place half a passionfruit (flesh side up) gently on top of the cocktail for an elegant presentation.
- Pour 1 oz of prosecco into a shot glass and serve alongside the martini.
- Serve!
Notes
I do not recommend batching this cocktail as the shaking in a cocktail shaker helps emulsify the ingredients and develop the flavor profile.
For the ripest passion fruits, opt for wrinkly, deep purple fruits - smooth or green ones will be unpleasantly sour. In a pinch, skip the fresh garnish and use frozen passion fruit for the recipe.
